Ingredients
- 4 skinless salmon fillets or beef
 
  - 150g/4oz each
 
  - 3 tbsp oyster sauce
 
  - 2 tbsp teriyaki sauce
 
  - 1 tbsp honey
 
  - 1 tbsp oil (a mix of vegetable and sesame)
 
  - 1 tbsp finely grated fresh rootginger
 
  - 1 garlic clove , finely sliced
 
  - 1 red chilli , deseeded amd finely sliced
 
  - 500g mixed green vegetables - we used bok choi, sugar snaps and broccoli
 
 
 
 
 
 
  
 
  - 2 salmon steaks
 
  - 1cm piece root ginger , grated
 
  - 2 spring onions , finely sliced
 
  - soy sauce , to season
 
  - chilli oil, to season
 
  - a handful of coriander leaves, to serve
 
  - basmati rice , steamed, to serve

  - 1½ tbsp finely shredded freshroot ginger
 
  - 3 tbsp finely shredded spring onions
 
  - 2 tbsp light soy sauce

  - 2 tsp sesame oil

  - 1¼kg beef shin or brisket , cut into very large chunks
 
  - 2 onions
 
  - 50g ginger
 
  - 3 garlic cloves
 
  - small bunch coriander
 
  - 2 tsp Chinese five-spice powder
 
  - 6 whole star anise
 
  - 1 tsp black peppercorns
 
  - 100g dark brown muscovado sugar
 
  - 50ml dark soy sauce
 
  - 50ml light soy sauce
 
  - 2 tbsp tomato purée
 
  - beef stock
 
 
 TO SERVE
- thumb-sized chunk ginger , shredded into matchsticks
 
  - 1 tbsp vegetable or sunflower oil
 
  - cooked jasmine rice
